Beet Gazpacho

Ingredients

  • 2 large beets, cooked, peeled and diced
  • 3 chopped garlic cloves
  • 1 red onion, minced
  • 1 tbs. Dijon mustard
  • 1 tbs. Sherry vinegar, or more to taste
  • 1 ½ cups ice cold water
  • Salt and Pepper to taste
  • 1 Optional garnish: chopped chives or diced avocado

Place all ingredients in a food processor and puree. Season to taste
